A mysterious gaggle of transparent igloos have appeared in the garden of the Auburn Hotel. Inside, brave Melburnians who dare to venture out during winter’s darkest days will find sweet surprises: your own space styled in cosy comfort, cocktails fashioned from American Honey liqueur and snacks spiked with honey from Melbourne’s own rooftop bees. They’ve kindly shared the recipe to their extra sweet take on the classic Hot Toddy below.

– Honey Hot Toddy –
– Ingredients –
45ml American Honey bourbon liqueur
10ml honey water, or to taste
20ml fresh lemon juice
45ml hot water (boiling is best)
– Method –
To make “honey water” syrup mix 5ml water and 5ml honey (good quality, like Melbourne’s own Rooftop Honey). In a small rocks glass, small mug/cup or even a small latte glass, add liqueur, honey water, lemon juice and hot water. Stir to combine. Garnish with a lemon peel, a cinnamon stick and a star anise.
