We’re back and raising our glasses to another year of Australian craft spirits and boutique bars. In case you missed it: here are 14 brand new haunts to try (in what’s left of) this month.

Johnny’s Green Room
An homage to a former neighborhood bar of the same name, the new Johnny’s Green Room now sits atop the redeveloped King & Godfree building. With bowlfuls of cacio e pepe to be washed down with negronis and spritz, the rooftop bar sets out to recreate the atmosphere of a retro Roman night out – see if you can squint hard enough for the Colosseum to take the place of our Eureka Tower on the skyline.

St Giles Wine Bar
This new inner suburban wine bar focuses mostly on Australian, French and Italian drops. It’s got all the non-liquid essentials you desire too; a crackling fireplace in winter, al fresco space to sip in during summer and cheese, charcuterie and seafood grazing platters for all seasons. Lucky suburbanites.

The Greville
Plush is the word that comes to mind upon entering this new bar with dedicated rooms for drinking, dining and/or dancing. Sip gold flecked martinis (darlinks!) while surrounded by lush velvet interiors, custom art and neighboring South Yarra’s social set. Our favourite spot is by the windows in the Champagne Bar; all the better for people watching. Cover image: Lauren Sadler

Harlow
A traditional British pub gets a nouveau makeover. Harlow features a doggo-friendly tiered courtyard (all the better perspective to watch live music acts from), multiple beer bars and really good burgers with custom fruity hot sauces. Don’t forget to try the gin and juice pops!

Also try… Sunset Cali; overlooking the St Kilda foreshore, this bar spreads a little California love alongside Latin flavours / Thataboy; another wine-centric bar and bottle shop for the Melbourne CBD appropriately adorned with barrels and bottles / A colourful, outdoorsy, pop-up container bar that is Peachy Keen has appeared in Williamstown for a limited time only / If you like Peachy, you’ll probably enjoy yet another westside container bar – Lickety Split – in Footscray / There’s rum and high seas hi-jinks at a relaunched Captain Capel if you happen to be heading down the Mornington Peninsula this summer / Housed inside a hotel, Floyd’s Bar is bringing vintage Italiano vibes to the city. It’s always aperitivo hour there.
Here’s all the News that’s Fit to Drink…
– As part of their 10th birthday celebrations, Seddon Wine Store aims to raise over $10,000 this year for the Asylum Seeker Resource Centre. To help with this goal, they’ve released an exclusive ‘Warm Welcome’ gin in collaboration with Four Pillars. Grab it for the noblest martini you can have this season.

– The beautiful Coombe Yarra Valley has dipped its toes into distilling (with a little help from their neighbours at Alchemy Distillers) with the release of a lemon myrtle-accented Dame Nellie Melba London Dry Gin. It’s strictly limited edition, so try it asap at their cellar door! I’d love to see them try a pink gin next – with peach, raspberry and vanilla flavours – inspired by Peach Melba of course!

– How drool-worthy does Macadamia and Wattleseed liqueur sound? The new release Mac by Brookie’s delivers. Experiment with this local tipple wherever you would usually use amaretto, nocello or Frangelico (or lazily over ice with lime).

– From Rum Diary Spiced Rum’s “Experimental Kitchen” comes their second release: Cocos Nucifera! It’s an all-natural coconut rum made with activated coconut charcoal and spiced with cacao and wattleseed as conceptualised by W.A. bartender Elise Godwin. We’re feeling a tropical holiday coming on…
