Don’t you just love stumbling upon a “why didn’t I think of that?” idea? In the never-ending quest for fresh yet super simple garnish ideas, I stumbled upon this spritzy, cucumber concoction by kosher bar and eatery Shiloh. They rim their glasses with middle eastern spice mix za’atar (if you can’t find it, try using dukkah) for a salty, savoury addictive hit.
– Za’atar Delight –
– Ingredients –
45ml gin (they use Hendrick’s, I recommend Here’s Looking at You, Kid’s Wild Rose Gin)
45ml fresh cucumber juice
30ml fresh lime juice
12ml simple syrup
fresh ice
za’atar, to garnish
cucumber ribbon, to garnish
– Method –
1. Dip the rim of your tumbler win lime juice, beaten egg white or water and rim with with za’atar 2. Fill glass with ice. Add cucumber juice, lime juice and simple syrup 3. Stir gently to mix. 4. Top with a ribbon of cucumber.
Note: to make cucumber juice grate or process 6 large cucumbers. Lay a sieve over a bowl and add pulp to it. Gently press with a spatula or spoon. Leave to sit for a few hours until all juice runs out. You can strain again through a clean cloth or coffee filter (optional) to clarify the juice further. Should make 4-6 cups.
