It’s National Margarita Day. So it’s pretty much the law that you have to make up a batch of these easy Tropical Kombucha Margaritas today. Don’t blame me, I don’t make the rules!

The tang of kombucha adds another layer to the zingy lime of a classic margarita. Smokiness always pairs well with tropical flavours so feel free to switch up tequila for mezcal or a similar smoked agave spirit if you’re feeling adventurous – tastes like standing next to the fire at an island bbq! For this margarita, I use Tequila Tromba Reposado or – for a smokier alternative – Blake Snake ASp Reposado. Even if you’re not officially celebrating Margarita Day, you should pencil in this easy and surprisingly low-sugar margarita recipe for your next #margaritamonday.
– Tropical Kombucha Margaritas –
60ml aged tequila (100% agave)
10ml Marionette orange curacao
45ml lime juice
1 passionfruit, pulped
40ml Soda Press Co passionfruit & mandarin kombucha syrup
Zest of 1 lime, to garnish
1 tablespoon flaky sea salt, preferably smoked (this one is sublime), to garnish
Combine lime zest and salt on a small plate. Run a cut lime around the rim of your tumblers and dip them into the salt. Combine your choice of agave spirit, curacao, lime juice, passionfruit pulp and kombucha syrup in a shaker with 1 pinch if your lime salt. Add a couple of big handfuls of ice and shake until chilled (about 15 seconds). Strain into glasses over fresh ice. Makes 2.
