Recipe: The easy ‘Homing Pigeon’ cocktail for World Whisky Day

Cheers to World Whisky Day! In honour of this auspicious occasion, Starward‘s head bartender Cam kindly shows us how to make an original twist on the classic ‘Airmail’ cocktail. This drink straddles that fine line between being fancy enough to impress your friends but easy enough to make at home (I can verify that it’s rather tasty too). Homing Pigeon

30ml whiskey (like Starward Wine Cask)

20ml fresh lime juice

15ml honey water*

Ginger beer

Add all ingredients – except the ginger beer – into a cocktail shaker with ice. Shake and strain into a chilled coupe glass. Top with ginger beer to taste. Optionally, garnish with a bruised mint leaf.
*Honey water can be made by adding equal parts honey to boiling water. Cool before use.
